<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a theobromine-accumulating N-methyltransferase capable of being utilized as an enzyme for industry, foods, or medical treatments, to provide a method for modifying the caffeine biosynthetic metabolism of a caffeine or theobromine-producing plant, plant tissue or plant cell to efficiently produce a caffeine metabolic system compound, to provide a method for modifying the production ratio of caffeine metabolic system compound groups, to provide a new polypeptide capable of being utilized for the methods, and to provide a polypeptide encoding the same. <P>SOLUTION: The polypeptide is a new N-methyltransferase originated from cacao. The N-methyltransferase is produced with a microorganism or plant transformed with a vector containing a polypeptide encoding the polypeptide.
