<P>PROBLEM TO BE SOLVED: To provide a simple and stable method for producing an Ume (a Japanese plum) vinegar extract with a high mumefural content using the Ume vinegar as a raw material and to provide a composition having a fine-quality flavor thereof. <P>SOLUTION: The simple and stable method for producing the Ume vinegar extract with the high mumefural content is characterized as follows. A production process contains two stages of a concentration step and a heating step and the moisture content is reduced in the concentration step. The mumefural is then produced while maintaining the moisture content in the heating step. Pressurizing is further carried out and honey, a sugar sweetener or citric acid is added before finishing into the extract in the heating step. The Ume vinegar extract composition has the fine-quality flavor. Furthermore, the clear Ume vinegar extract composition without a precipitate is obtained by removing a water-insoluble component by a filtration method or a centrifugal separation method. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
