<P>PROBLEM TO BE SOLVED: To provide a method for producing a mumefural-containing fruit extract and to provide the mumefural-containing fruit extract. <P>SOLUTION: The method for producing the mumefural-containing fruit extract is carried out as follows. A fruit juice obtained from a fruit [except an Ume (a Japanese plum)] is use as a raw material and two stages of a concentration step and a heating step are included. In the concentration step, the moisture content of the fruit extract raw material is reduced to ≤50 mass%. In the heating step, the moisture content is then maintained.
