PROBLEM TO BE SOLVED: To provide an exhaust method and device, capable of fully reducing exhaust wind quantity without decrease in the exhaust efficiency of vapor, oily smoke, etc. generated from an apparatus. SOLUTION: An exhaust port 12 of this exhaust device 10 is formed on a ceiling surface 14 and a hood 24 is fixed thereon so as to surround the exhaust port 12. A hanging wall 26 is liftably fixed on the outside surface 24A of the hood 24 and a sensor 28 is provided for detecting the lifting/lowering position of the hanging wall 26. A controller 30 controls an inverter 22 on the basis of the detected value of the sensor 28 and it adjusts the number of revolutions of an exhaust fan 20.
