摘要 A method of making Allium ursinum kimchi by mixing leaves of Allium ursinum(bear's garlic) and spices without green onion, garlic and ginger is provided. The product has efficacy of garlic, good flavor and antiatherosclerotic, anticholesterol, antihypertensive, antidiabetic and anticancer activity. The Allium ursinum kimchi contains 80 to 97.2% by weight of leaves of Allium ursinum, 0.5 to 3.6% by weight of salt-fermented shrimps or salt-fermented anchovies, 0.3 to 2% by weight of sugar, 0.5 to 3.6% by weight of glutinous rice paste and 1.5 to 10.8% by weight of red pepper powder. For an example, 500g leaves of Allium ursinum are soaked in 9% brine for 1 to 2hr, dried and mixed with 9.3g salt-fermented shrimps, 5.1g sugar, 9.3g glutinous rice paste and 27.3g red pepper powder.
