A method of making a whole barbecued hog by spraying a hog whose intestine and bones are removed with edible spices containing a tenderizing agent and then roasting is provided. It removes the odor of hog and tenderizes the meat of a specified portion. A hog whose intestine is removed, is separated from bones, sprayed with edible spices containing a tenderizing agent, aged at 5deg.C for 48hr and then roasted. The edible spices containing a tenderizing agent comprise 30% by weight of pears, 20% by weight of kiwis, 30% by weight of pineapples, 2.5% by weight of sugar, 2% by weight of cinnamon bark powder, 2% by weight of garlic powder, 1% by weight of flavors and 12.5% by weight of water.
