A method for forming gas bubbles in a liquid product, wherein at least a condensing gas and a gas relatively poorly soluble in the product are mixed with the product to form said gas bubbles in the product, wherein at least one of said gases is injected into the product at a supersonic mixing speed. The invention further provides an apparatus for forming gas bubbles in a liquid product, in particular according to a method of any one of the preceding claims, the apparatus being provided with a mixing space (3) to mix the product with at least a condensing gas and a gas relatively poorly soluble in the product, the apparatus being further provided with at least one gas injector (1) which is arranged to spout at least one of said gases into the mixing space (3) at a supersonic mixing speed. |
