Liquid is evaporated from a solution, e.g. saline water, by heating the solution in a substantially closed chamber under positively applied air pressure so that no vapour Bubbles form within the solution, and removing vapour from the surface of the heated solution. The vapour is condensed to obtain purified liquid. e.g. demineralized water. As shown the process is carried out in a triple-effect evaporator comprising three vapour chambers 51, 61, 71 surrounded by heating chambers 52, 62, 72. respectively. Saline water flows into chambers 51, 61, 71 through ports 53, 63, 73, respectively. Chamber 51 is heated by hot gases .circulating through chamber 52 and heater 90, which is controlled by temperature-sensing device 94. Blower 95 forces air through ports 54, 64, 74 into chambers 51, 61, 71: and airvapour mixtures leave through ports 56, 66, 76, respectively. The throttle-valves in these ports are adjusted so that the air-vapour mixture is just above the saturation pressure of steam for the respective water surface temperature. The air-vapour mixture from chamber 51 is introduced into heating chamber 62, and the air-vapour mixture from chamber 61 is conveyed to heating chamber 72. The mixture of air and condensate from chambers 62 and 72 is conveyed via ports 69 and 79 to duct 97, where the air is separated. The demineralized water flows through heat exchanger and condenser unit 80 where it preheats the saline water flowing through conduit 81 to the three vapour chambers, and where it condenses the vapour leaving chamber 71 via port 76. Another system for the demineralization of water is described in conjunction with Fig. 3 (not shown), wherein saline water is heated (without vaporization) under positivelyapplied air pressure in a stainless steel chamber, and the heated saline water flows through a throttle valve into a second chamber where flash vaporizaton occurs. The vapours leaving the second chamber are condensed to obtain demineralized water.
