PROBLEM TO BE SOLVED: To reduce manpower and a working hour by reducing the number of steps by simultaneously cutting and separating cartilage of the head included in a head part when a processor of a salmon cuts and separates the salmon into the head part and the body, and as a result, to simplify an installation and to reduce operation efficiency and an operation cost. SOLUTION: This apparatus for collecting the cartilage of the head of the salmon has a base plane for allowing the salmon to be put on, a pressing means 3 for holding the salmon on the base plane by pushing the boundary part of the body and the head part of the salmon, a head part-cutting blade 4 for cutting the boundary part of the salmon held by the pushing means, and a limited part-cutting blade 5 for cutting and separating the limited part including the cartilage of the head constituting the head part.
