FIELD: food industry. ^ SUBSTANCE: invention relates to technology of preparing pectin extract from vegetable raw materials. Method of invention comprises consecutive extraction of citrus cakes first with dimethylformamide and then, after separation of extract, with liquid acetylene. Thereafter, solid phase is subjected to hydrolysis-extraction operation followed by separation of liquid phase once hydrolysis-extraction is completed. If needed, liquid phase is concentrated or dried. ^ EFFECT: reduced loss of pectin. |
