PROBLEM TO BE SOLVED: To provide a new fused yeast having trehalose production ability and a fermentation property necessary for production of bread. SOLUTION: Wine yeast excellent in fermentability and trehalose-producing wild yeast are used as parent strains and the two yeasts are fused by a cell fusion method to provide a new fused yeast. The fused yeast produces trehalose in large amounts and has fermentation power equivalent to that of conventional yeast for bread because of sufficient fermentation performance when adding the yeast to production process of bread dough or frozen bread dough, and provides bread dough, frozen bread dough and bread containing trehalose in large amounts. The resultant frozen bread dough enables longer freeze storage by effect of trehalose which the new fused yeast produces, compared with a case when using conventional bread yeast.
