PROBLEM TO BE SOLVED: To obtain a bread production-improving agent which can simply and efficiently prevent the sagging of bread dough and maintain bread productivity in a good state, although whey protein is used, and enables the production of bread at a low cost in comparison with that in a case using powdered skim milk, and to provide a method for producing bread using the bread production-improving agent. SOLUTION: The bread production-improving agent comprises a caseinate and whey protein. The method for producing the bread, comprising mixing raw materials, kneading the mixed raw materials, fermenting the kneaded raw materials, and baking the fermented raw materials, is characterized by adding the bread production-improving agent to the raw materials before the baking.
