The process of the parent Specification (wherein aqueous dispersions of cellulose are produced by mechanically disintegrating "level-off D.P. cellulose" in an aqueous medium) is modified in that the composition comprising the cellulose and an aqueous medium contains 30 to 90% by weight of the cellulose and may therefore range in consistency from a relatively soft solid to a crumbly free flowing dry-appearing material instead of being a liquid dispersion. The mechanical disintegration may be such that at least 1% by weight of the disintegrated cellulose has a particle size not exceeding 1 micron. The mixture may be diluted with an aqueous medium to form a dispersion or a gel. The level-off D.P. cellulose may be initially wet and may be dried before the mechanical disintegration step by displacing the water in the cellulose by a low boiling water-miscible organic compound and then evaporating off the organic compound. Alternatively the initially wet cellulose may be freeze-dried after the mechanical disintegration step by either of the above methods.
