<p><P>PROBLEM TO BE SOLVED: To obtain a composition for pickles forming pickling paste having a high nutritive value, and improving problems of smell, workability, difficulty in care, or the like. <P>SOLUTION: This composition for pickles consists mainly of powdered soybean protein, and contains 0-60 pts. wt. of rice bran based on 100 pts. wt. of powdered soybean protein, added oligosaccharide and/or degraded starch, and at least one bacillus selected from the group of yeast, lactobacillus and Aspergillus oryjae added as a starter. The starter preferably comprises bread yeast. The composition for pickles is obtained by subjecting the powdered soybean protein to defatting so as to have≤10 wt.% of oil and fat content. The composition for pickles comprises a packaged powdered pickling-paste mix charged in a package material usable also as a pickling container. <P>COPYRIGHT: (C)2005,JPO&NCIPI</p> |
