<P>PROBLEM TO BE SOLVED: To provide a low-calorie air-containing meat product with soft and puffy palate feeling, resistant to hardening even if cooled, and to provide a method for producing the meat product. <P>SOLUTION: The method for producing the air-containing meat product comprises incorporating sausage dough with ≤25 wt.% fat, a thickening agent and albumen, adding 25-50 wt.% water in several portions followed by making an agitation mixing, packing without deaeration, molding and then heating. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
