<P>PROBLEM TO BE SOLVED: To provide a seasoning for processed vegetable enabling improvement of desired taste value after cooking processed vegetable subjected to acidic treatment for improvement in preservability. <P>SOLUTION: The seasoning for processed vegetable is used for cooking processed vegetable treated so as to have acidic pH conditions suitable for preservation, and contains alkaline for neutralizing acidic pH of the processed vegetable.
