PURPOSE: Provided is a kimchi jam which is manufactured by using a fermented kimchi. Therefore, it gives kimchi flavor and taste when spreaded on bread, and contains abundant minerals. CONSTITUTION: The kimchi jam is characteristically manufactured by the steps of: preparing kimchi by washing chinese cabbage, salting it in a saline solution, and stuffing kimchi fillings into the chinese cabbage; fermenting the kimchi at 120-160 deg.C; cutting the fermented kimchi into a 0.5-2cm size; mixing 150-250g of fruit jam and 400-600g of sugar with 1000g of kimchi pieces then stirring them; and steaming them for 8-12 minutes. |
