PROBLEM TO BE SOLVED: To promote the oil-draining action immediately after frying in an oil and eliminate greasy taste in eating by using chitosan. SOLUTION: A crumbed food A is produced by smearing the surface of a food main body 1 with bread crumb 3 containing chitosan. The oil absorption (residual oil ratio) of the coating layer 2 immediately after frying the crumbed food A in oil is lowered by the oil-draining action of chitosan. |
