Antimicrobial substances in fermented pollen extracts are provided, which antimicrobial substances have improved and stable antimicrobial activity at wide range of temperature and pH, so that they can be useful for development of natural food preservatives, antibiotics and treating drugs. The antimicrobial substances in fermented pollen extracts are obtained by subjecting crude fermented pollen extracts to silica gel electrophoresis using ethylacetate as an eluting agent to obtain an active fraction, and subjecting the active fraction to thin layer chromatography using 1% acetate containing mixed solution of acetonitrile and benzene to obtain fluorescent materials with Rf values of 0.40, 0.49 and 0.59, wherein the fermented pollen extracts are obtained by fermenting pollen with Lactobacillus rhamnosus SNTP01(KACC 91057), precipitating the fermented pollen with ethanol, and extracting the ethanol precipitate of the fermented pollen with ethyl acetate.
