METHOD FOR EXTRACTING PECTINE FROM ASIAN PEAR FLESH USING SULFITE TO OBTAIN LIGHT COLORED PECTINE AND PEAR PECTINE EXTRACTED THEREBY

PURPOSE: A method for extracting pectin from Asian pear flesh is provided to prevent a browning phenomenon caused by sugars and enzymes, thereby providing light colored pectin, and to increase extraction yield. CONSTITUTION: The method for extracting pectin from Asian pear flesh comprises the steps of: adding 10 parts by weight of sodium sulfite solution to 100 parts by weight of fresh Asian pear flesh; pulverizing the mixture by a miller; adding 100 parts by weight of distilled water thereto; adjusting the pH to 2.0 with 1N nitric acid; carrying out extraction in a reflux extraction device at 90 deg.C for 1 hour, followed by filtering with gauze and filter paper to obtain supernatant; adding isopropanol to the filtrate in an amount of 2 times of the volume of filtrate, followed by storing for 5 hours to obtain precipitate; and washing the precipitate with ethanol, followed by drying and pulverizing to provide pectin.
