PROBLEM TO BE SOLVED: To provide a method for dry fractionation of oil-and-fat containing≥60 wt.% of symmetric triglycerides for obtaining in high yield a crystal fraction of a highly symmetric triglycerides content by uniformly and quickly depositing a granular crystal suitable for squeezing or filtration. SOLUTION: The method for the dry fractionation of oil-and-fat comprises the following procedure: The oil-and-fat containing≥60 wt.% of symmetric triglycerides is completely dissolved, the resultant solution being quenched and crystallized under being left at rest to deposit unstable crystals. The remaining solution is kept at a temperature 1-15°C lower than the melting point of the stable crystal of the oil-and-fat to deposit the granular stable crystal followed by separating the crystal fraction and a liquid fraction.
