<p>[PROBLEMS] To reproduce the same taste and texture of a retort- packed food as in its manufacture in a short time irrespective of the shape and capacity of the retort-packed food. [MEANS FOR SOLVING PROBLEMS] After the retort-packed food (R) is put in a closed chamber (1) and a sealing door (1a) is closed, compressed air is supplied into the closed chamber (1) by a pressurizing means (2) to increase air pressure in the entire part of the chamber. The sealingly packaged retort-packed food (R) in the closed chamber (1) is heated by a heating means (3) to increase the temperature of the retort-packed food (R), and in response to an increase in the temperature of the retort-packed food (R) by the heating means (3), the pressurizing means (2) is controllably operated by a control means (4). Thus, even if air in a sealingly packed package (R2) is inflated and a pressure in the package is increased, a pressure in the closed chamber (1) is increased in connection with a rise in the pressure in the package and the pressures in and outside the chamber are kept in balance, and a food material (R1) can be heated to a high temperature in a short time without allowing the package (R2) of the retort-packed food (R) to be burst.</p> |
