PROBLEM TO BE SOLVED: To provide a method for producing hydroxycitric acid by a fermentation method using microorganisms. SOLUTION: The production method contains a step of culturing a microorganism having hydroxycitric acid productivity and a step of recovering the hydroxycitric acid from the cultured liquid.
