A particulate sweetening composition, which may be used as a substitute for sugar, comprises at least 85 parts by weight of a maize starch hydrolysate having a dextrose equivalent of 15 to 45 or a waxy starch hydrolysate having a dextrose equivalent of 5 to 15, and up to 10 parts by weight of a non-nutritive sweetener or sweeteners, such as cyclamate and saccharin, said composition having a bulk density of up to 30 lbs/cu.ft. The particles are preferably in the range 14-100 U.S. mesh. the composition may be prepared by forming an aqueous solution of the ingredients and drying to a glass, preferably in the form of a layer, especially a foamed layer which is then broken up, in which last event a whipping aid such as a gum, caseinate, or other water-dispensible edible protein may be added. Other optional ingredients include agents to facilitate drying, flavour improvers, flow conditioners, bulking agents, and additives to reduce caking and hydroscopicity. Exemplified are lactose, mannitol, dextrins, propylene glycol alginate, gum arabic, guar gum, gum tragacanth, carboxymethyl cellulose, mono and di glycerides, hydrolysed caseinate, hydrolysed starches and caramel colouring solution. |
