PURPOSE: Provided are a fermented soy composition added with natural organic acid and a fabrication method thereof. The fermented soy composition is harmless to the human body, free from browning and has extended storage. CONSTITUTION: A fermented soy composition added with natural organic acid is characterized in that raw material is selected from soy sauce, fermented soy paste, chinese fermented soy paste and the like; pyroligneous liquid obtained by carbonizing a broad-leaved tree or needle-leaf tree is condensed and purified to give organic acid; and the organic acid is added to the raw material. |
