<p><P>PROBLEM TO BE SOLVED: To reduce the by-products from the distillation step in the production of Shochu. <P>SOLUTION: The method for producing Shochu comprises using the by-products from the distillation step as a primary fermentation mixture or drawing water, wherein the method comprises (A) a step wherein the raw material starch is fermented, (B) a step wherein the resultant fermentation mixture is distilled under atmospheric or reduced pressure so as to keep clear and to obtain the product as pure distillate and the distillation by-products as remaining liquid, and (C) a step wherein the by-products are added to the raw material starch and the mixture is subjected to fermentation. Even when using the distillation by-products, the Shochu is produced without decreasing fermentation recovery and without causing degradation of the product, and the amount of the distillation by-products generated in the distillation step can be reduced. <P>COPYRIGHT: (C)2005,JPO&NCIPI</p> |
