Pre-prepared coated meat products, such as southern fried chicken may be delivered in a frozen state to a fast food outlet. The coated meat is cooked to give a consistent product by <SL> <LI>a) placing the product in a pre-warmed combination oven, <LI>b) cooking with a combination of convention, steam and microwave radiation at a temperature of 170 - 230{C for between one and ten minutes, then <LI>c) venting the steam from the cooking chamber and further cooking with at least convection, preferably a combination of convection and microwave radiation at a temperature of 180 - 250{C for between one and ten minutes. </SL> The temperatures selected are dependent upon the size of the portions of the meat. A browned piece of coated meat is produced. |
