PURPOSE: A method of producing cold noodles by mixing Corchorus olitorius powder with wheat flour in a specified ratio is provided. The product containing Corchorus olitorius has the characteristic aroma of Corchorus olitorius as well as a pharmacological action thereof. CONSTITUTION: To produce cold noodles using wheat flour as a main component, 2kg of potato starch is mixed with 500g of Corchorus olitorius powder, based on 20kg of wheat flour and then kneaded. Thereafter, the dough is injected into a mold and extruded, wherein 2.5% by weight or less of the Corchorus olitorius powder is used, based on the weight of wheat flour. |
