<P>PROBLEM TO BE SOLVED: To provide a method for reconstituting dried bean curd by which anyone hardly has failures in cooking dried bean curd. <P>SOLUTION: The method for reconstituting the dried bean curd has the following processes: a process (a) of soaking dried bean curd in water to make the dried bean curd absorb a necessary and sufficient amount of water; a process (b) of wrapping the steeped dried bean curd and rapidly freezing it; and a process (c) of taking out the frozen and steeped dried bean curd to move in a container as it is and subjecting the frozen steeped dried bean curd to thawing and heating so as to fully reconstitute the dried bean curd. A dried bean curd semi-cooked product is obtained through the process (a) of soaking the dried bean curd in water to make the dried bean curd absorb a necessary and sufficient amount of water, and the process (b) of wrapping the steeped dried bean curd and rapidly freezing the steeped dried bean curd. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
