A multi-deck food oven has stacked compartments and simultaneously bakes different bakery products at the same temperature. Also claimed is an operating process in which the baking chamber (2) target temperature is determined, and the ideal baking temperature and ideal duration for each product. The actual baking duration time is reduced by determining the difference between the target temperature in the baking chamber and the ideal baking temperature in the respective compartment.
