PROBLEM TO BE SOLVED: To provide a method for producing coffee beverage not requiring any complicated processes and any expensive equipment to effectively suppress sour taste through a simple treatment. SOLUTION: This method for producing coffee beverage comprises spraying roasted coffee beans with 0.5-5.0 wt.% of alkaline solution having a concentration of 1.0-2.0 M/L to obtain a coffee extract from the roasted coffee beans.
