摘要 PROBLEM TO BE SOLVED: To obtain an improved starch composition enabling production of such a filling as to have resilience and shape retainability which are characteristics required as filling, and good flavor and meltability in the mouth, by an industrial production method using a high temperature pressure-heating type heat exchanger such as a raking type heat exchanger, a direct steam heating sterilizer, or the like. SOLUTION: The starch composition is obtained by adding starch to a mixture of saccharides andαcrystal gel of an emulsifier to adjust the swelling rate of the starch to 200-300%. In the starch composition, an amount of the saccharides accounts for 25-75 pts. wt. based on the water content of 100 pts. wt. in the mixture of the saccharides and theαcrystal gel of the emulsifier, and an amount of the emulsifier accounts of 0.3-4 pts. wt. based on the starch of 100 pts. wt.
