The invention relates to a method and reactor for production of hydroxymethylfurfural (HMF), by thermal conversion of a hexose, particularly fructose and/or of an osidic precursor of said hexose, particularly, saccharose. According to the invention, accumulation of humins in the reactor can be avoided by using a reactor with an interior, particularly interior walls and surfaces of the elements making up the structure of the reactor coming into contact with the reaction medium, made from a material designed not to generate any mechanical, chemical and/or electrostatic interaction with the humins and with establishment of a specific accumulation phase for the humins. The accumulation of humins in the reactor is detected in said humin accumulation phase and the humins accumulating in said phase are removed.
