PROBLEM TO BE SOLVED: To provide a method for producing a yeast doughnut improved so that the insufficiency of the volume of the doughnut may be improved, the vacancy between a filling and dough may be reduced, and the filling may be positioned at the center part of the dough. SOLUTION: This method for producing the yeast doughnut comprises forming a doughnut dough containing yeast, swelling the dough by fermenting the yeast, subjecting the swelled dough to a baking or steaming treatment, cooling the resultant dough, inserting a filling nozzle of a rotary filling machine to the interior of the doughnut, and filling the flowable filling through the filling nozzle.
