The preparation of unsalted black olives for preserving consists of freezing of the olives at -25 to -35 degrees C. This is followed by holding at -12 to -23 degrees C up to packaging date, when the olives are washed at room temperature and packed e.g. in a glass jar. EMBODIMENT - The jar is pasteurized and sterilized before use and has a shelf life of up to three years.
