FIELD: food-processing industry, in particular, production of gerodietary food concentrate used as first dinner course. ^ SUBSTANCE: method involves mixing dried fermentolysate and acidic hydrolysate of fish processing wastes, soya texturate, cabbage, tomato, bean flour, onion, carrot, sorghum groats, CO2-extracts of dill and celery, rape oil and preparation produced from Mortierella nigrescens microorganism biomass by predetermined process; packing resultant mixture. ^ EFFECT: increased content of readily assimilated calcium, phosphor, and nutritive substances, and improved quality of product. |
