<P>PROBLEM TO BE SOLVED: To provide a method for acquiring a new acetic acid tolerance gene, breeding acetobacter having improved acetic acid tolerance by using the acquired acetic acid tolerance gene and improving the acetic acid tolerance of a microorganism belonging to acetobacter and provide a method for producing food vinegar having high acetic acid concentration in high efficiency by using the acetobacter having improved acetic acid tolerance. <P>SOLUTION: The invention provides a DNA encoding a protein TPI expressed by (A) a protein containing a specific amino acid sequence or (B) a protein having the specific amino acid sequence wherein one or more amino acids are substituted, deleted. inserted, added or inverted and having a function to improve acetic acid tolerance. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
