A device for producing an opening (4) or cavity in the side of a ceramic product (2) during product moulding in a mould (3) with a moulding cavity (6) delimited by a moulding surface (7) which has a window (11), comprising a deformable punch (5), joined on the window (11), designed to project into or retract from the moulding cavity (6), with the ability to vary its rigidity. The device (1) comprises punch (5) shape variation differential constriction means (14; 8) and actuator means (33) for punch (5) deformation, which together produce a controlled anisotropic punch (5) deformation, which makes the punch (5) project into the moulding cavity (6).
