FIELD: canned food industry, in particular, production of semi-finished garnish potato. ^ SUBSTANCE: method involves washing, inspecting, cleaning, performing additional cleaning, cutting, blanching to semi-ready state, vacuum packing in laminated film bags, providing sealing and pasteurization procedures; before cleaning procedure, treating potato with salt of arachidonic acid with alkali metal or ammonium used in an amount of 0.1-1105 mg/t and holding for about 5 hours. ^ EFFECT: improved organoleptical properties of garnish potato. ^ 1 ex |
