PROBLEM TO BE SOLVED: To realize the combustion control method capable of performing the control in a state of quickly coping with the variation of combustion in an incinerator, even in the incinerator where the steam is not generated. SOLUTION: This combustion control method is applied in the incinerator having a secondary combustion space for burning a combustion gas generated in the incinerator process in the furnace. This method includes a theoretical air flow rate calculating process for calculating an estimate value of the theoretical air flow rate on the basis of the total combustion air flow rate supplied into the furnace and the secondary combustion space and a concentration of oxygen at an outlet of the secondary combustion space, a smoothing process for calculating the moving average of the estimate value of the stoichiometric air flow by using a moving average time selected in accordance with the combustion processing capacity of the furnace, a combustion index calculating process for setting a ratio of the moving average of the estimate value of the stoichiometric air flow rate and the stoichiometric air flow rate in a case when the standard waste is incinerated at a rated processing pace, as the combustion index, and a target combustion index calculating process for determining the moving average of a value obtained by adding up the target incineration pace to the combustion index, and subtracting the same by the actual incineration pace, as the target combustion index.
