Foodstuffs are treated, wholly or partly, with acids so that they release this acid into the stomach liquid when digested. Suitable acids are hydrochloric, amine hydrochlorides, lactic, acetic, glutamic, aspartic, malic, succinic, oxalaxetic, ascorbic and alpha ketoglutaric. They are used to bring about a regular functioning of the pylorus in people where the secretion of HCl in the stomach is insufficient. |
