PURPOSE: A manufacturing process of charcoal containing bean curd(tofu) is provided, which charcoal containing bean curd has useful function derived from charcoal such as toxin absorption and filtering, deodorization and antimicrobial activity as well as various nutrients derived from bean curd(tofu). CONSTITUTION: The manufacturing process of charcoal containing bean curd(tofu) comprises the steps of: washing charcoal, peanut and glutinous rice with water, and pulverizing them; dipping beans in water for 1 day, pulverizing the dipped beans, and filtering the pulverized beans to obtain pure bean solution; adding 3 to 6 wt.% of glutinous rice powder and 6 to 8 wt.% of peanut powder into 100 wt.% of pure bean solution and mixing them; heating the mixture at 100 deg. C for 10 minutes; adding 0.3 to 0.8 wt.% of charcoal powder and 1 to 3 wt.% of Perilla japonica into the heated bean solution, and adding a coagulating agent into the mixture; and inserting the coagulated bean curd(tofu) into a mold and pressing the bean curd(tofu). |
