摘要 PURPOSE: Yam containing dumpling skin and a manufacturing method thereof are provided, which yam increases viscosity of dumpling skin due to starch contained in the yam and contains medicinal components, so that the yam improves shape and commercial quality of the dumpling, and a consumer can conveniently eating yam without refusal feeling. CONSTITUTION: The method for manufacturing yam containing dumpling skin comprises the steps of: mixing 99.5 to 99.8 wt.% of water and 0.2 to 0.5 wt.% of salt to prepare salt solution(S10); mixing 67.5 to 72.7 wt.% of wheat flour, 27 to 32 wt.% of the salt solution and 0.3 to 0.5 wt.% of yam powder(S20); kneading the yam mixture for 15 to 20 minutes(S30); and shaping the dumpling skin comprising drawing the dough for dumpling to form a flat dough(S41), and cutting the flat dough in a circular shape.
