Foaming agent for food products consists of a mixt. of (I) a monofatty acid ester of a polyhydroxy compd., pref. monoglyceride, propylene glycol monostearate, etc. and (II) an alkoxylated monofatty acid ester of a polyhydroxy compd., pref. polyoxethylene sorbitan monostearate the polyhydroxy compds. contg. is not 2 OH gps. and 12 C atoms in the aliphatic chains, while the polyhydroxy compds. are esterified with mono-acyl compds. having 12 - 24 C atoms in the acyl gp. Used as a foaming agent for whipped cream, vegetable products, animal protein, vegetable oils, and sweets. Gives very stable foamed food products with a low density at a minimum cost. |
