<P>PROBLEM TO BE SOLVED: To fundamentally improve taste of a glucosamine salt, especially glucosamine hydrochloride which is especially used as an assistant food recently, and the tendency of the addition of which to a food is increased, because the solution of the astringency and harsh taste of the glucosamine salt is a large problem, and a method for masking them by formulating an organic acid or a fruit juice is not sufficient. <P>SOLUTION: The subject mixed glucosamine salt-containing composition contains mixed glucosamine salts obtained by substituting a part, preferably ≥30% of the strong acid salt part of a strong acid salt of the glucosamine with an organic acid salt. As a result, the astringency and the harsh taste peculiar to the strong acid salt of the glucosamine can be reduced or eliminated.
