<P>PROBLEM TO BE SOLVED: To develop a cooking method for tasty fish to increase fish consumption. <P>SOLUTION: A method for producing seafood steak is provided, comprising the following practice: A saline solution is soaked with pieces of a fish cut to one-dish size, and the fish pieces are dried to the extent of 80-90% of their initial weight with 0-6°C dry air and then subjected to low-temperature aging for about 10 h under a gentle airflow of 0-3°C and 90%RH or higher. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
