<P>PROBLEM TO BE SOLVED: To provide a burnt mark-attached semi-cooked cereal from which a burnt mark-attached cooked cereal excellent in texture, gloss and flavor can be obtained and the burnt mark-attached semi-cooked cereal and to provide a method for producing these cereals. <P>SOLUTION: In the burnt mark-attached semi-cooked cereal, treatment for previously alfatizing a protein is carried out and an oily loosening agent is applied to the surface of the processed cereal and the processed cereal is frozen in a block-like shape in a state oil-fried and baked in entirely loosened state and the frozen body is packaged in a state in which coat of oily burnt mark-attaching agent is formed on the surface of the block-like frozen body. In the burnt mark-attached cooked frozen cereal, treatment for previously alfatizing a protein is carried out and an oily loosening agent is applied to the surface of the processed cereal and the processed cereal is frozen in a block-like shape in a state oil-fried and baked in entirely loosened state and the frozen body is packaged in a state which the oily burnt mark-attaching agent is applied to the surface of the block-like frozen body and burnt mark is attached thereto. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
