<P>PROBLEM TO BE SOLVED: To provide an acidic oil-in-water type emulsion composition excellent in expression of body flavor after ripening even using enzyme-treated yolk, exhibiting a mellow flavor, and having a high diglyceride content. <P>SOLUTION: The acidic oil-in-water type emulsion composition comprising fats comprising at least 30 wt.% of diglycerides and a yolk treated with an enzyme selected among esterases, lipases, and phospholipases, is characterized by containing an antioxidant of 1,000-10,000 ppm of the oil phase comprising the fats and 0.4-4.5 in terms of weight ratio to the net amount of the yolk in the enzyme-treated yolk. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
