<P>PROBLEM TO BE SOLVED: To provide a method for producing an alkaline earth metal-enriched vegetable protein composition dispersed in aqueous medium, forming suspension stable in the aqueous medium and having rich mineral. <P>SOLUTION: This method for producing the vegetable protein composition comprises combining aqueous slurry of a vegetable protein material and hydrated gel of alkaline earth metal phosphate. The hydrated gel of alkaline earth metal phosphate forms aqueous slurry of alkaline earth metalhydroxide, and the alkaline earth metalhydroxide forms at least 2 mass % of the slurry. The hydrated gel is prepared through rapidly adding phosphoric acid to the slurry of the alkaline earth metalhydroxide and intensely mixing the slurry of the alkaline earth metalhydroxide with phosphoric acid to form homogenized gel, thus the gel has at least 3.0 mass % of solid and can form aqueous suspension stable in water. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
