A mixer device for chocolate (C) inside a trough comprises at least one rotary wheel with a means for receiving chocolate and generating a flow of chocolate for each wheel revolution. An apparatus for carrying out a temperature treatment of a chocolate material suitable for making chocolate products comprises a trough (1), a heating unit (2) for the chocolate inside the trough and a tempering unit (3) with an inlet (4) and outlet (5) connected to the trough. A mixer device for the chocolate inside the trough comprises at least one rotary wheel with a means such as a channel for receiving chocolate and generating a flow of chocolate for each wheel revolution. An independent claim is also included for a temperature treatment method for chocolate material used to make chocolate products (e.g. pralines) which uses this apparatus to heat the chocolate to a first temperature at which it is fluid.
